Americans eat more than 3 million tons of chocolate each year, enjoying the unique taste that only the beans of the cacao (可可) plant can provide. To make the taste delicious as a sweet treat, chocolate makers combine cacao beans with lots of sugar. Together with saturated fatty acids (饱和脂肪酸) provided by the addition of cacao butter from the fruit, the few health benefits provided by the chocolate bean are outweighed by ingredients (成分) that increase the risk of illness.
To address this imbalance, a team of researchers from ETH Zürich in Switzerland has gone back to the basics and reinvented the chocolate ingredients from the ground up. They’ve exchanged some of the sugar with a part of the cacao fruit that’s usually thrown away.
By separating and drying the fiber-rich (富含纤维) inside wall of the fruit — or endocarp — and combining it with juice from the soft inside part of the fruit that covers the cacao beans, the researchers found they could make something sweet to exchange the sugar commonly added to chocolate ingredients. Not only did the resulting chocolate have higher fiber content than traditional blocks, but it also provided equal sweetness without the same level of sugar usage.
As an added bonus, parts of the fruit usually thrown away as waste could be kept and marketed, allowing cacao farmers to make more money.
Changing a new product developed in a laboratory into a marketable product requires the clearing away of numerous difficulties, not least of which is the basic infrastructure (基础设施). “Although we’ve shown that our chocolate is attractive and has a comparable mouth-feel to traditional chocolate, the whole creation process will need to be adapted, starting with the cacao farmers, who will require drying machines,” says the study’s lead author Kim Mishra.
Yet now that the whole-fruit chocolate has proven itself, there is good reason to believe that this low-sugar, high-fiber option will be sold in supermarkets in the near future.

Americans eat more than 3 million tons of chocolate each year, enjoying the unique taste that only the beans of the cacao (可可) plant can provide. To make the taste delicious as a sweet treat, chocolate makers combine cacao beans with lots of sugar. By separating and drying the fiber-rich (富含纤维的) inside wall of the fruit — or endocarp — and combining it with juice from the soft inside part of the fruit that covers the cacao beans, the researchers found they could make something sweet to exchange the sugar commonly added to chocolate ingredients. Not only did the resulting chocolate have higher fiber content than traditional blocks, but it also provided equal sweetness without the same level of sugar usage.
As an added bonus, parts of the fruit usually thrown away as waste could be kept and marketed, allowing cacao farmers to make more money.
Changing a new product developed in a laboratory into a marketable product requires the clearing away of numerous difficulties, not least of which is the basic infrastructure (基础设施). “Although we’ve shown that our chocolate is attractive and has a comparable mouth-feel to traditional chocolate, the whole creation process will need to be adapted, starting with the cacao farmers, who will require drying machines,” says the study’s lead author Kim Mishra.
