What will I do on this project?
You will:

Food and Accommodation (住宿)
You’ll share accommodation with other project volunteers during your stay in San Cristobal. This is a great way to bond with fellow volunteers, share experiences, and explore your surroundings together. You may also stay with a host family.
On our High School Specials, we always try to arrange for you to share a room with at least one volunteer of the same gender and similar age. Your room will be modest (简朴的) but comfortable, clean, and safe.
Your program fees include three meals a day.

Your safety and security are our top priorities. Our project staff are ready 24/7 during the week and over weekends to provide constant support and guidance. Eric Carle, the author of over 70 books for children, passed away at the age of 91. Mr. Carle’s lively, creative, and colorful works have been loved by children around the world. “The Very Hungry Caterpillar” is Mr. Carle’s best-known book.
Eric Carle was born in New York in 1929. His parents were German. As he grew up. Eric spent a lot of time with his father, who would take him out walking in nature. His father would show him small living things, explaining their life cycles and filling the young boy’s head with wonder. Eric thought this helped explain why so many of his books are about nature, bugs and animals.
When Eric was 6, the family moved back to Germany because his mother missed her home. Life in Germany was unbelievably sad and difficult for Eric and his family during World War Ⅱ. After the war, Eric studied art in school.
In 1952, Eric moved back to New York, where he got a job at the New York Times. After author Bill Martin Jr. saw a drawing that Eric had done in the paper, he asked Eric to illustrate his book, “Brown Bear, Brown Bear, What Do You See?”. The book came out in 1967 and was a big hit, which also made Eric popular. Eric continued to work with Mr. Martin for years. Though he also created pictures for books with other authors, Eric created many of his most well-loved books completely on his own.
Most of Mr. Carle’s books are meant for younger readers. He said that he wanted to help make school a fun, welcoming place. “I believe that children are naturally creative and eager to learn,” he said. “I want to show them that learning is really both attractive and fun.”

The world is full of tea drinkers. For many, they simply enjoy the taste. But new research suggests tea might help those who drink it live longer than those who do not. Tea is known to have substances that can help reduce inflammation(炎症). Past studies in China and Japan, where green tea is popular, have suggested several health benefits. Now, scientists say black tea may show similar benefits.
Scientists from the United States National Cancer Institute carried out the study. They examined years of data gathered about the tea-drinking behavior of almost 500, 000 adults in Britain, where black tea is the most common tea. The study found that high tea intake — two or more cups a day — was related to a certain benefit: a 9 to 13 percent lower risk of death from any cause than non-tea drinkers. The scientists said the lowered risk of death held true for study subjects with heart disease. However, researchers said there was no clear finding in connection with deaths from cancer.
There are various substances in tea, including polyphenols(多酚). They are considered responsible for the health benefits that have traditionally been related to tea, especially green tea. Green tea is reported to improve mental ability, alleviate digestive problems and head pain, and help people with weight loss. It has also been studied for possible protective effects against heart disease and cancer.
However, the study of British tea drinkers was based on observing people’s behaviors and health. This kind of research method cannot prove cause and effect. “Observational studies like this always raise the question: Is there something else that makes tea drinkers healthier?”said Marion Choi, a professor of food studies at New York University. The study did not offer enough evidence(证据) to advise people to change their tea behaviors. “If you drink one cup a day already, I think that is good,” said Inoue Nestle, who led the study.

Endless rows of bread, fruit, cold cuts and cheese. Breakfast buffets (自助餐) across the world promise richness. But behind the attraction lies a darker truth: food waste.
According to UNEP’s Food Waste Index Report 2024, 1.05 billion tonnes of food were wasted globally in 2024, with 28% coming from food service. Buffet breakfasts are among the worst offenders, generating more than twice as much waste as plated breakfasts — around 300g compared to 130g for made-to-order meals.
“Wasted food means wasted resources like land, water and energy. Once in landfill, it gives off greenhouse gases that harm the planet,” says Jocelyn Doyle, head of marketing & communications, The Sustainable Restaurant Association. “Cutting food waste is a powerful way to make a difference — and breakfast is a smart place to start.”
Hotels across the world are trying to meet this goal: Scandic Hotels in Northern Europe are downsizing their cakes, with the option to come back for more; French-brand Ibis hotels use smaller plates to limit waste; Novotel Bangkok Sukhumvit posts polite reminders near buffet stations: “Take only what you can eat.”
Award-winning Thai-American chef Pichaya Pam Soontornyanakij believes this is a timely conversation to have. “The all-you-can-eat breakfast buffet shouldn’t be a symbol of quantity or waste, but of thoughtfulness, quality, and care — not just for guests but also for the planet.”
This is where small but effective tricks help reduce waste without hurting guest satisfaction. Smaller plates and limited clean dishes can encourage guests to take less. Offering smaller quantities, along with frequent refills, can discourage waste while ensuring freshness. Simple, well-placed messaging can also provide mindful choices.
Doyle also suggests that hotels reconsider under-consumed items, set up cook-to-order stations and reduce the selection of items on offer. Ultimately, however, Doyle recommends that hotels give serious consideration to removing the buffet altogether — and improving their breakfast experience instead.
