Every winter, when we breathe out, we can see a puff of white “smoke”. But in summer, no matter how hard we breathe out, we can never see it. This white “smoke” is not water vapor (水蒸气), and it’s definitely not magic. It’s tiny ice crystals (冰晶) or small water droplets (水滴) made from the water vapor in the air. To understand this process, we first need to remember a small fact: the air we breathe out has a lot of water vapor in it. It’s just like the wet air floating in the bathroom after a shower—we can’t see it normally, but it “shows up” when the temperature changes. In winter, the outdoor temperature is very low (for example, below 10℃). Our warm breath (it’s about 37℃, almost the same as our body temperature) hits the cold air. It’s just like pouring hot soup into ice water—it cools down in a second. Water vapor “groups together” when it gets cold. If the temperature drops quickly to above 0℃, the water vapor turns into tiny water droplets. When these small droplets gather, they form the white “smoke” we see.
