People first created these cookies during the Middle Ages, in the city of Nuremberg. At that time, Nuremberg was a centre of the spice trade (香料贸易). People there used honey and spices, like ginger to make these cookies. At first, people cooked Lebkuchen cookies for religious (宗教的) holidays or sending them to others during winter festivals. By the 1500s, they became closely connected with Christmas. From then on, eating Lebkuchen cookies together during Christmas became a tradition, encouraging togetherness among people. People who made Lebkuchen cookies in Nuremberg even formed a guild (a special group) to protect their secret recipes! The cookies usually had shapes like hearts or stars, with messages like “Love” or “Joy” on them. Lebkuchen cookies carry symbolism. The spices mean warmth and protection during cold winters, while honey symbolizes sweetness and long life. Today, heart-shaped Lebkuchen cookies are still popular with many people, ranking (排名) only after the Elisenlebkuchen cookies in popularity, symbolizing love and care. Nowadays, Lebkuchen cookies are a must-have at German Christmas markets, especially in Nuremberg. Families enjoy having them with hot drinks or hanging them as decorations. Chen, who was born on September 14, 1917 in Beijing, disliked cooking when she was a young kid. But when she was preparing her first meal at the age of eighteen, she fell in love with cooking. In 1949, Chen and her family moved to Cambridge, America. There she often cooked food for many tourists. Noticing the growing number of Chinese immigrants (移民) who wanted to have Chinese food, Chen decided to open her first restaurant called “Joyce Chen Restaurant” in 1958. The restaurant served a mix of Chinese and American dishes at the beginning. However, the American ones started to disappear from the menu as Chinese dishes became more and more popular, resulting in people starting to wait in line. After two years, Chen began teaching cooking classes. In 1962, her first cookbook came out. The cookbook taught people how to use chopsticks, drink traditional Chinese tea, and understand many other important Chinese traditions. Her cookbook turned out to be a big success. She opened her restaurant for many tourists, followed by two growing ones in 1969 and 1973, before passing away in Kentucky in 1994. Joyce Chen introduced (引进) Chinese food to America. She made a big difference to American culture. Her photo was shown on a US stamp (邮票) in 2014. And on September 14 every year, there is a “Festival of Dumplings”. It's more than making food; it's a way to understand life better. Before we cook, we must choose good ingredients and prepare our tools. This is just like setting goals in life. We need to plan our studies and future jobs. When we cook, sometimes the fire is too strong. Sometimes, we need more salt. We must watch and change things as we cook. Life is the same. Things do not always go as planned. Sometimes we need to change our plans when things become different. Besides, cooking needs time and care. Some dishes need a long time to cook. We must wait and watch carefully. In life, we also need time to learn new things or wait for the right time to do something. Being careful with small details (细节) in cooking helps make the food better. For example, we must heat the pan to the right temperature. In life, small things, like being kind to others or taking care of our health, are important for living a better life too. When we finish cooking, some meals are successful while some are not. If a meal fails (失败), we can learn from our mistakes and try again. We will face difficulties and failures in our life too. They help us grow and become stronger. Also, we often cook to share food with family or friends. Sharing makes us happy. In life, sharing joy with others is important too.
