The mint chocolate mousse (薄荷巧克力慕斯) is a combination of rich chocolate and refreshing mint, creating a dessert that’s as luxurious as it is light. Every spoonful carries a delicate flavor.

Instructions

•STEP 1: Infuse (浸泡) a mint tea bag in boiling water, and let it cool to a point where it’s warm to the touch but not too hot. This step infuses the water with a refreshing mint flavor, setting the foundation for the mousse.

•STEP 2: Combine 100 g of dark chocolate with the mint water, and gently warm it over low heat. Stir until the chocolate melts, and remove it from the heat to prevent overheating. Add the remaining chocolate to the still-warm mixture. This technique brings the chocolate to a proper temperature to lift up its silkiness and avoid any graininess.

•STEP 3: Once the mint chocolate cools to the room temperature, it’s time to add the egg whites and salt. Use an electric mixer to beat the mixture into a light, airy texture (质地) that forms soft peaks which slowly fold back into the mixture.
