Jim Curry lights the furnace (火炉) of his portable blacksmith’s shop in the parking lot of Christ Episcopal Church in Guilford, Connecticut. The furnace glows orange and lets off a low roar. It’ll get up to 2,000 degrees, hot enough to soften the metal of a tray of disassembled shotgun parts.
A crowd is watching, and Curry picks out a 9-year-old named Oliver to help him. Oliver swings cautiously at first, flakes of red-hot metal falling around his feet. Curry is a co-founder of Swords to Plowshares Northeast, the organization putting on this event, which helps police departments manage their gun buyback programs and repurpose the items into gardening tools. Molecules in blood and urine may reveal how much energy a person consumes from ultra-processed foods, according to a new study.
It’s the first time that scientists have identified biological markers that can indicate higher or lower intake of the foods, which are linked to a number of health problems, said Erikka Loftfield, a US National Cancer Institute researcher who led the study.
She said it could help us to understand more about the impact of these products on our health. Ultra-processed foods — like sugary cereals, sodas, chips, frozen pizzas and more — are products created through industrial processes with ingredients such as additives, colors and preservatives not found in home kitchens.
However, studying their health impacts is hard because it’s difficult to accurately track what people eat. Typical diet studies rely on asking people what they ate during a certain period. But such reports are known to be unreliable because people don’t remember everything they ate, or they don’t record their diets accurately.
In this study, Loftfield and her colleagues examined existing data of more than 1,000 older US adults. More than 700 of them had provided blood and urine samples, as well as detailed dietary recall reports, collected over a year.
The scientists found that hundreds of metabolites — products of digestion and other processes — corresponded to the percentage of energy a person consumes from ultra-processed foods. From those, they devised a system using 28 blood markers and up to 33 urine markers that reliably predicted ultra-processed food intake in people consuming typical diets.
It’s still early research, but identifying blood and urine markers to predict consumption of ultra-processed foods is “a major scientific advance,” said Dr. Dariush Mozaffarian from Tufts University, who was not involved in the study. Loftfield said she hoped to apply the tool to existing studies where blood and urine samples are available to track, for instance, the effect of consuming ultra-processed foods on cancer risk.
However, at a time when support for government research is being cut, funding remains uncertain.

In the early 1960s a group of psychology students at the University of North Dakota were asked to assist with an experiment involving lab rats. Six of the students were told that their rats had been bred for brightness in running the maze, while the other six students were informed that their rats could be expected for “genetic reasons” to have limitations to learning to run the maze. In fact, none of the rats had been trained to get out of a maze and had been randomly assigned to either of the two cages.
Prior to learning the results, I predicted that no differences would be found between the groups in learning to run the maze. It turned out that my predictive powers were notably lacking. But what could possibly account for these results? Robert Rosenthal, a renowned social psychologist at Harvard University, explored what specifically was involved in the different ways in which the two groups of rats were “handled”.
Rosenthal found that the students with “brighter rats” ranked their subjects as brighter, more pleasant, and more likeable than did the students who had “duller rats”. They also said they handled their animals more than the students expecting poor performance did. It’s interesting to think that on some level, rats not only “knew” the students cared about them by the way they were handled but that this handling improved their learning to run the maze.
Based on the study, Rosenthal conducted a test in Spruce Elementary School, where teachers were told there were a group of students in each class who were set to “blossom” academically during the new school year. In fact, this group of students was randomly selected. A year later, these students’ IQ scores improved significantly more than other students’. He called what had occurred the Pygmalion Effect — expectations influencing performance.
The Pygmalion effect is best understood as a reminder to be mindful of the potential influence of our expectations. Having high expectations in many situations can inspire others regarding their own capabilities. People’s limitations can be stretched if you change your perception of their limitations.

Jim Curry lights the furnace (火炉) of his portable blacksmith’s shop in the parking lot of Christ Episcopal Church in Guilford, Connecticut. The furnace glows orange and lets off a low roar. It’ll get up to 2,000 degrees, hot enough to soften the metal of a tray of disassembled shotgun parts.
A crowd is watching, and Curry picks out a 9-year-old named Oliver to help him. Oliver swings cautiously at first, flakes of red-hot metal falling around his feet. He reshapes it into a trowel you could use to plant flowers in a garden. “It was exciting,” Oliver says. “I love the fact that you can take metal that’s random and shape it into something useful.”
Curry is a co-founder of Swords to Plowshares Northeast, the organization putting on this event, which helps police departments manage their gun buyback programs and repurpose the items into gardening tools. Curry says he was inspired by a Mennonite group in Colorado that reforged (重新锻造) useless items into garden tools. Those doing the repurposing are often prisoners, volunteer blacksmiths or eager participants. The finished tools are donated to community gardens and agricultural high schools and the harvested vegetables donated to soup kitchens and homeless shelters, according to the group’s website.
Mary Ann Osborne first volunteered with Swords to Plowshares when a family member fell victim to violence. She helps collect items through police buybacks. “You see the items lying there and then you see them get broken down” she says. “And then you see people hammer (捶打) them, and then you see people digging their gardens and something grows. You actually see the transformation.” She says the hammer and forge are powerful symbols and the negative forces can be reshaped into something positive and peaceful.
Curry wears a cross around his neck. “It’s made out of pieces of an AK-47,” he says. “But God takes that element and then God’s love breaks it apart, reshapes it, then transforms it into the sign of greatest hope — the cross. And that’s why I wear it.”

Molecules in blood and urine may reveal how much energy a person consumes from ultra-processed foods, according to a new study.
It’s the first time that scientists have identified biological markers that can indicate higher or lower intake of the foods, which are linked to a number of health problems, said Erikka Loftfield, a US National Cancer Institute researcher who led the study.
She said it could help us to understand more about the impact of these products on our health. Ultra-processed foods — like sugary cereals, sodas, chips, frozen pizzas and more — are products created through industrial processes with ingredients such as additives, colors and preservatives not found in home kitchens.
However, studying their health impacts is hard because it’s difficult to accurately track what people eat. Typical diet studies rely on asking people what they ate during a certain period. But such reports are known to be unreliable because people don’t remember everything they ate, or they don’t record their diets accurately.
In this study, Loftfield and her colleagues examined existing data of more than 1,000 older US adults. More than 700 of them had provided blood and urine samples, as well as detailed dietary recall reports, collected over a year.
The scientists found that hundreds of metabolites — products of digestion and other processes — corresponded to the percentage of energy a person consumes from ultra-processed foods. From those, they devised a system using 28 blood markers and up to 33 urine markers that reliably predicted ultra-processed food intake in people consuming typical diets.
It’s still early research, but identifying blood and urine markers to predict consumption of ultra-processed foods is “a major scientific advance,” said Dr. Dariush Mozaffarian from Tufts University, who was not involved in the study. Loftfield said she hoped to apply the tool to existing studies where blood and urine samples are available to track, for instance, the effect of consuming ultra-processed foods on cancer risk.
However, at a time when support for government research is being cut, funding remains uncertain.

In the early 1960s a group of psychology students at the University of North Dakota were asked to assist with an experiment involving lab rats. Six of the students were told that their rats had been bred for brightness in running the maze, while the other six students were informed that their rats could be expected for “genetic reasons” to have limitations to learning to run the maze. In fact, none of the rats had been trained to get out of a maze and had been randomly assigned to either of the two cages.
Prior to learning the results I predicted that no differences would be found between the groups in learning to run the maze. It turned out that my predictive powers were notably lacking. But what could possibly account for these results? Robert Rosenthal, a renowned social psychologist at Harvard University, explored what specifically was involved in the different ways in which the two groups of rats were “handled”.
Rosenthal found that the students with “brighter rats” ranked their subjects as brighter, more pleasant, and more likeable than did the students who had “duller rats”. They also said they handled their animals more than the students expecting poor performance did. It’s interesting to think that on some level, rats not only “knew” the students cared about them by the way they were handled but that this handling improved their learning to run the maze.
Based on the study, Rosenthal conducted a test in Spruce Elementary School, where teachers were told there were a group of students in each class who were set to “blossom” academically during the new school year. In fact, this group of students was randomly selected. A year later, these students’ IQ scores improved significantly more than other students’. He called what had occurred the Pygmalion Effect — expectations influencing performance.
The Pygmalion effect is best understood as a reminder to be mindful of the potential influence of our expectations. Having high expectations in many situations can inspire others regarding their own capabilities. People’s limitations can be stretched if you change your perception of their limitations.
