At the age of 23, Shanice Lim, a graduate of the Culinary Institute of America, landed a dream job cooking meals at Zén restaurant, one of Singapore’s finest restaurants. Day in and day out, for 16 hours a day, Lim served up plates of the delicious food there.
However, Lim’s dreams went beyond serving up excellent food at a first-class establishment. She wanted to be her own boss and to make her flavors and food accessible to the average Singaporean. So, after only a few years at Zén restaurant, Lim decided to quit.
With her father’s help, Lim’s dream business adventure got started: a food stand where she now spends her days serving traditional Malaysian food at reasonable prices. The stall (货摊) features recipes Lim had learned from her grandmother and she named her little business “So Lemak”, which is also the name of the rich, creamy flavor that is characteristic of so many Malaysian dishes.
After opening it, everything was a challenge. Lim had to prepare hundreds of meals without any assistance, including serving more than 130 pounds of chicken wings. And, in contrast to the air-conditioned Michelin kitchen she’d left behind, Lim’s food stall only had a fan, in a country where temperatures regularly reach 90 degrees Fahrenheit. “Working in a restaurant, I didn’t really sweat. But in a stall, it was so hot that I fell sick once a month. Despite the difficulties, I still want to be my own boss and I believe my efforts will pay off,” Lim said.
After nearly a year on the job, Lim was able to hire two additional staff members to help her. Nowadays, she serves around 300 plates a day, and So Lemak is finally successful in a competitive market, despite charging a little more for nasi lemak than the average food stall, because her version is incredibly rich and tasty. A recent study showed that eating processed red meat (like bacon or hot dogs) frequently can increase the chances of developing dementia (痴呆) by 13 percent, but replacing red meat with nuts, beans or fish can lower the risk by 20 percent.
“Dietary guidelines tend to focus on reducing risks of chronic (慢性的) conditions, while cognitive (认知的) health like dementia is less frequently discussed,” said Daniel Wang, a founding member of the Mass General Brigham health care system.
The results, published online in Neurology on 15 January, show that the dementia risk is related to an imbalance of good and bad bacteria(细菌)in our guts caused by red meat. Researchers tracked the health of 133,000 people for more than 40 years to understand how diet affects brain health. The participants were mostly nurses and other healthcare workers who regularly shared details about what they ate.
People who ate processed red meat daily were more likely to develop dementia than those who rarely ate these foods. A standard serving of red meat was about the size of a soap bar. The participants underwent standard memory tests, which revealed that each daily serving of processed meat aged the brain by about 1.6 years. Additionally, people who ate more meat, whether processed or regular, reported memory and thinking problems.
When we eat meat, our gut bacteria break it down into a substance called TMAO(Trimethylamine N-oxide). Researchers think TMAO might harm our brains by causing certain proteins to clump together — the same proteins they see in dementia. However, they still need to do more research to understand this fully.
“We need these kinds of long-term studies to understand dementia because it develops very slowly, over many years,” Dr Wang added. Choosing what we put on our plate could be a key differentiator of brain health.

Alongside the crisps in the snack aisle, supermarkets are now stacking shelves with roasted chickpeas, cheese bites, and beef jerky. In Britain, Ocado, an online supermarket, figures over 40% of consumers have increased their protein intake over the past year. So what explains the constant appetite?
Gym enthusiasts have been wolfing down protein for decades. More recently the less strong have also realised that protein can help them build muscle while feeling fuller for longer. Juergen Esser at Danone, a French dairy giant, says hunger for protein first took off among youngsters who want to look muscular. It soon spread to older people eager to stay strong and healthy. The pandemic got people worrying about their health and increased demand.
High-protein products are helping firms expand. Revenues at Danone increased by 4.3% in 2024, driven by high-protein yoghurts and drinks. The question is whether the trend has gone too far. The World Health Organisation recommends 0.83 grams a day per kilogram of body weight. By that measure, the average American or Briton consumes too much.
For food firms already, struggling to meet multiple requirements, it is yet another challenge. Consumers do not only want more protein and less/ultra-processing, but also more plant-based food and anything good for the gut (肠道). The Curators, a British snackmaker, has a balancing act to perform. When the firm began making soya and lentil chips, it settled on ten grams of protein per bag. Recipes with more were not as tasty. And as food crazes come and go, a pleasant flavour may be the most enduring requirement of all.

At the age of 23, Shanice Lim, a graduate of the Culinary Institute of America, landed a dream job cooking meals at Zén restaurant, one of Singapore’s finest restaurants. Day in and day out, for 16 hours a day, Lim served up plates of the delicious food there.
However, Lim’s dreams went beyond serving up excellent food at a first-class establishment. She wanted to be her own boss and to make her flavors and food accessible to the average Singaporean. So, after only a few years at Zén restaurant, Lim decided to quit.
With her father’s help, Lim’s dream business adventure got started: a food stand where she now spends her days serving traditional Malaysian food at reasonable prices. The stall (货摊) features recipes Lim had learned from her grandmother and she named her little business “So Lemak”, which is also the name of the rich, creamy flavor that is characteristic of so many Malaysian dishes.
After opening it, everything was a challenge. Lim had to prepare hundreds of meals without any assistance, including serving more than 130 pounds of chicken wings. And, in contrast to the air-conditioned Michelin kitchen she’d left behind, Lim’s food stall only had a fan, in a country where temperatures regularly reach 90 degrees Fahrenheit. “Working in a restaurant, I didn’t really sweat. But in a stall, it was so hot that I fell sick once a month. Despite the difficulties, I still want to be my own boss and I believe my efforts will pay off,” Lim said.
After nearly a year on the job, Lim was able to hire two additional staff members to help her. A recent study showed that eating processed red meat (like bacon or hot dogs) frequently can increase the chances of developing dementia (痴呆) by 13 percent, but replacing red meat with nuts, beans or fish can lower the risk by 20 percent.
“Dietary guidelines tend to focus on reducing risks of chronic (慢性的) conditions, while cognitive (认知的) health like dementia is less frequently discussed,” said Daniel Wang, a founding member of the Mass General Brigham health care system.
The results, published online in Neurology on 15 January, show that the dementia risk is related to an imbalance of good and bad bacteria(细菌)in our guts caused by red meat. Researchers tracked the health of 133,000 people for more than 40 years to understand how diet affects brain health. The participants were mostly nurses and other healthcare workers who regularly shared details about what they ate.
People who ate processed red meat daily were more likely to develop dementia than those who rarely ate these foods. A standard serving of red meat was about the size of a soap bar. The participants underwent standard memory tests, which revealed that each daily serving of processed meat aged the brain by about 1.6 years. Additionally, people who ate more meat, whether processed or regular, reported memory and thinking problems.
When we eat meat, our gut bacteria break it down into a substance called TMAO(Trimethylamine N-oxide). Researchers think TMAO might harm our brains by causing certain proteins to clump together — the same proteins they see in dementia. However, they still need to do more research to understand this fully.
“We need these kinds of long-term studies to understand dementia because it develops very slowly, over many years,” Dr Wang added. Choosing what we put on our plate could be a key differentiator of brain health.

Alongside the crisps in the snack aisle, supermarkets are now stacking shelves with roasted chickpeas, cheese bites, and beef jerky. Gym enthusiasts have been wolfing down protein for decades. More recently the less strong have also realised that protein can help them build muscle while feeling fuller for longer. Juergen Esser at Danone, a French dairy giant, says hunger for protein first took off among youngsters who want to look muscular. It soon spread to older people eager to stay strong and healthy. The pandemic got people worrying about their health and increased demand.
High-protein products are helping firms expand. Revenues at Danone increased by 4.3% in 2024, driven by high-protein yoghurts and drinks. The question is whether the trend has gone too far. A recent study showed that eating processed red meat (like bacon or hot dogs) frequently can increase the chances of developing dementia (痴呆) by 13 percent, but replacing red meat with nuts, beans or fish can lower the risk by 20 percent.
“Dietary guidelines tend to focus on reducing risks of chronic (慢性的) conditions, while cognitive (认知的) health like dementia is less frequently discussed,” said Daniel Wang, a founding member of the Mass General Brigham health care system.
The results, published online in Neurology on 15 January, show that the dementia risk is related to an imbalance of good and bad bacteria(细菌)in our guts caused by red meat. Researchers tracked the health of 133,000 people for more than 40 years to understand how diet affects brain health. The participants were mostly nurses and other healthcare workers who regularly shared details about what they ate.
People who ate processed red meat daily were more likely to develop dementia than those who rarely ate these foods. A standard serving of red meat was about the size of a soap bar. The participants underwent standard memory tests, which revealed that each daily serving of processed meat aged the brain by about 1.6 years. Additionally, people who ate more meat, whether processed or regular, reported memory and thinking problems.
When we eat meat, our gut bacteria break it down into a substance called TMAO(Trimethylamine N-oxide). Researchers think TMAO might harm our brains by causing certain proteins to clump together — the same proteins they see in dementia. However, they still need to do more research to understand this fully.
“We need these kinds of long-term studies to understand dementia because it develops very slowly, over many years,” Dr Wang added. Choosing what we put on our plate could be a key differentiator of brain health.

Juergen Esser at Danone, a French dairy giant, says hunger for protein first took off among youngsters who want to look muscular. It soon spread to older people eager to stay strong and healthy. The pandemic got people worrying about their health and increased demand.
High-protein products are helping firms expand. Revenues at Danone increased by 4.3% in 2024, driven by high-protein yoghurts and drinks. The question is whether the trend has gone too far.
