I recently went on my first overseas vacation to Greece. I was with my in-laws and my wife, and naturally, we went to restaurants whenever we were hungry. Having lived in North America for my entire life, I had certain expectations of restaurants: You go in, peruse the menu, place your order, get your food, eat it, pay, tip, and go on your way. I knew that European countries did not generally participate in tipping culture, but I didn’t understand how that fundamentally altered the entire business interaction.
Whenever we finished eating, we would relax with the dishes that we were very obviously done with, chat for a bit, and wait for the bill. Wait, wait, and wait!
This happened at every restaurant we went to: After we were done and ready to pay and leave, we would end up waiting twenty or thirty minutes to actually get the bill and pay. We absolutely could not figure it out! The servers seemed to be so attentive to everyone else in the restaurants, the locals, but for the obvious group of tourists, we were just left to wait, wait, and wait! It was actually getting frustrating!
I finally figured it out on the last day of our trip, watching the locals. When the locals finished their meals, they would not pay immediately. Instead, they would sit and chat, and just sort of… hang out. They would pay when they were ready to leave, and no one would hustle (催促) them out of there. Because the servers weren’t working for pennies and dependent on tips, they had no reason to move people along. Everyone was allowed to move at their own pace, pay when they were ready to pay, and leave when they were ready to leave. The servers would expect the customers to approach or signal them that they were done, rather than checking every few minutes to get things moving. What a novel experience! I wish we had figured it out sooner.

Picture perfect: Is there such a thing as a classic?
The “Mona Lisa” is probably the most recognizable female face in the world. Every day around 20.000 people visit and view I. conardo da Vinci’s painting in the Louvre. Yet it became famous not because of an engaging semi-smile but a thief. Until a worker stole the masterpiece in 1911, it was still mostly unknown; viewers flooded in to see what a French newspaper called “an enormous, horrific, huge void”.
Classics of art literature and music are supposed to carry some mysterious appeal that endures across the ages. But as Rochelle Gurstein, a historian, writes in a new book Written in Water, the “timeless classic” is anything but “What I believed was written in stone was actually written in water,” she argues. Classics come and go.
The rise and fall of classics is not just a matter of changing tastes; art itself has changed. Artists used to strive to express ideal forms of beauty. Genius was the “child of imitation”, explained Joshua Reynolds, a British portraitist in the 18th century. Artists learned by studying and imitating classical masterpieces, often Roman copies of Greek sculptures.
The writing of art history has also changed tastes. In the 16th century Giorgio Vasari, an Italian painter, advanced an influential expression of artistic progress that was achieved in the realism of Raphael and Michelangelo. But in the 19th century John Ruskin, a critic, called attention to the pre-Raphaelite movement when he argued that the real “Old Masters” were actually medieval Christian painters. Seeing today’s desirable contemporary “masterpieces” sold at auction (拍卖) for millions, you are bound to wonder how critics 100 years from now will feel about them.
Much as in art, the “classics” of music and literature have not always been set in stone either. Today Johann Sebastian Bach is often regarded as the master of classical music. But after his death in 1750 Bach’s compositions fell out of fashion until Felix Mendelssohn, a German composer, rediscovered them in the 1820s.
Ms Gurstein’s perspectives show that the “status of a classic” depends on critics, and is a test to the power of passionate writers to change the way people look at art. Taste evolves, and it should. But true culture lives on only as long as people continue to argue over what counts as a classic today. The true enemy of the classic is not relativism or controversy. It is silence.

Columbia scientists have found specialized neurons (神经元) in the brains of mice that order the animals to stop eating. Though many feeding circuits (回路) in the brain are known to play a role in monitoring food intake, the neurons in those circuits do not make the final decision to cease eating a meal.
How does the brain know when the body has had enough and how does it act on that information to stop eating? Alexander Nectow, a physician-scientist at Columbia University Vagelos College of Physicians and Surgeons and his team member, Srikanta Chowdhury, used new single-cell techniques that make it possible to peer into a region of the brain and discern different types of cells that until now have been difficult to distinguish from one another.
During their profiling of a brainstem (脑干) region known for processing complex signals, the researchers spotted previously unrecognized cells that had similar characteristics to other neurons involved in regulating appetite. To see how the neurons influenced eating,the researchers engineered the neurons so they could be turned on and off by the researchers with light.
When the neurons were activated by the light, the mice ate much smaller meals. The intensity of the activation determined how quickly animals stopped eating. “Interestingly, these neurons don’t just signal an immediate stop; they help the mice to slow down their eating gradually,” said Chowdhury.
The researchers also looked at how other eating circuits and hormones affected the neurons. The researchers found that the neurons were silenced by a hormone that increases appetite and activated by a GLP-1 agonist, a class of drugs now popular for treating obesity and diabetes. These experiments found that these inputs helped the neurons track each bite the mice took.
“Essentially, these neurons can smell food, see food, feel food in the mouth and in the gut (肠道), and interpret all the gut hormones that are released in response to eating,” said Nectow. “And ultimately, they leverage all of this information to decide when enough is enough.”

The “Mona Lisa” is probably the most recognizable female face in the world. Every day around 20.000 people visit and view I. conardo da Vinci’s painting in the Louvre. Yet it became famous not because of an engaging semi-smile, but a thief. But as Rochelle Gurstein, a historian, writes in a new book Written in Water, the “timeless classic” is anything but “What I believed was written in stone was actually written in water,” she argues. Classics come and go.
The rise and fall of classics is not just a matter of changing tastes; art itself has changed. Artists used to strive to express ideal forms of beauty. Genius was the “child of imitation”, explained Joshua Reynolds, a British portraitist in the 18th century. Artists learned by studying and imitating classical masterpieces, often Roman copies of Greek sculptures.
The writing of art history has also changed tastes. In the 16th century Giorgio Vasari, an Italian painter, advanced an influential expression of artistic progress that was achieved in the realism of Raphael and Michelangelo. But in the 19th century John Ruskin, a critic, called attention to the pre-Raphaelite movement when he argued that the real “Old Masters” were actually medieval Christian painters. Seeing today’s desirable contemporary “masterpieces” sold at auction (拍卖) for millions, you are bound to wonder how critics 100 years from now will feel about them.
Much as in art, the “classics” of music and literature have not always been set in stone either. Today Johann Sebastian Bach is often regarded as the master of classical music. Columbia scientists have found specialized neurons (神经元) in the brains of mice that order the animals to stop eating. Though many feeding circuits (回路) in the brain are known to play a role in monitoring food intake, the neurons in those circuits do not make the final decision to cease eating a meal.
How does the brain know when the body has had enough and how does it act on that information to stop eating? Alexander Nectow, a physician-scientist at Columbia University Vagelos College of Physicians and Surgeons and his team member, Srikanta Chowdhury, used new single-cell techniques that make it possible to peer into a region of the brain and discern different types of cells that until now have been difficult to distinguish from one another.
During their profiling of a brainstem (脑干) region known for processing complex signals, the researchers spotted previously unrecognized cells that had similar characteristics to other neurons involved in regulating appetite. To see how the neurons influenced eating,the researchers engineered the neurons so they could be turned on and off by the researchers with light.
When the neurons were activated by the light, the mice ate much smaller meals. The intensity of the activation determined how quickly animals stopped eating. “Interestingly, these neurons don’t just signal an immediate stop; they help the mice to slow down their eating gradually,” said Chowdhury.
The researchers also looked at how other eating circuits and hormones affected the neurons. The researchers found that the neurons were silenced by a hormone that increases appetite and activated by a GLP-1 agonist, a class of drugs now popular for treating obesity and diabetes. These experiments found that these inputs helped the neurons track each bite the mice took.
“Essentially, these neurons can smell food, see food, feel food in the mouth and in the gut (肠道), and interpret all the gut hormones that are released in response to eating,” said Nectow. “And ultimately, they leverage all of this information to decide when enough is enough.”
