Surveys of hundreds of twins show that coriander love is caused by genes (基因). Charles Wysocki, a scientist at the Monell Chemical Senses Center in Philadelphia, Pennsylvania found that the twins would have the same reaction. That is to say, if one of them dislikes the coriander, so does the other, because of their same genes. “The study shows us that genes make you become a hater or a lover,” says Dr. Wysocki. Another survey of nearly 30,000 people shows that two genetic variants make people connect the taste of coriander with “soap” taste. One of those genes is named OR6A2. Dr. Wysocki and his team also found an association (联系) between coriander taste and several other genes, including a bitter-taste gene. He says that the differences between the variants could be a reason why people have different opinions on the flavor of coriander.
