For thousands of years, people have changed food to please their sense of taste. More than 3, 000years ago Mesoamericans, living in what is Mexico and Central America today, cooked com kernels (玉米粒) in a solution of wood ash or limestone. With the invention of canned goods in the 19th century, the industrial-scale transformation of food became possible. According to the UN, the average daily food supply available for a person in the rich world increased by over 20% between 1961 and 2021, to 3, 500 kilocalories. In that time, obesity rates have more than tripled; today, nearly one in three people globally is obese or overweight.
Now worries are mounting that the heavy processing used to cook up cheap, tasty snacks may itself be harmful. A parțicular target is “ultra-processed foods” (UPFs), heavily processed foods like ice-cream or instant noodles. At the heart of the debate is a question: are UPFs unhealthy because their nutritional content is poor, or does the processing somehow pose risks in itself? At the turn of the 21st century some scientists noticed that people in Brazil were buying less sugar and oil than in the past. Yet rates of obesity were still rising. This unintentionally occurred with the growing popularity of packaged desserts and ready-made meals.
By now numerous studies have shown that people who consume diets high in UPFs tend to have more health problems. But a recent analysis by Samuel Dicken and Rachel Batterham at University College London reviewed 37 studies and found that even after adjusting for fat, sugar and salt UPFs were still strongly linked to poor health. That suggests there is more to their harm than just a poor nutrient profile.
Where those harms come from is still unclear, however. With so many influential causes that could also explain poor health — such as income and education — observational studies alone cannot offer conclusive answers. Arne Astrup, a Danish researcher, argues that evidently most of the studies that make statistical adjustments to try to isolate (分离) the effects of processing are “not good enough”.

The researchers adopted computer models to compare costs, land needs, health impacts, and emissions involved in two scenarios for an imagined future where 149 countries in 2050 are using renewable sources for all energy purposes. In one scenario, firebricks provide 90% of industrial process heat. In the other, there’s zero adoption of firebricks or other forms of thermal energy storage. The researchers found the scenario with firebricks could cut costs by $1.27 trillion across the 149 countries, while reducing the demand for electrical energy and energy storage capacity from batteries.

The notebook stared back at me. Yellowing paper and black-and-white photographs spilled out of its sides. In handwritten Spanish, the label on its cover read “Family History”. I opened it to the first page and began to read.
“I’m not sure what it is that I’m about to write, but I’ve had this idea for a number of years…”
This was clearly Grandpa’s handwriting. In his basement in the suburbs outside of London I read on in silence. Within the first few pages of the notebook, Grandpa had recounted our family’s history. What I held in my hands was an oral history, consisting of diaries, letters, and newspaper cuttings from Grandpa’s own youth, a treasure of research.
I didn’t tell Grandpa what I’d found in his basement until one day he happened to see me there, with his notebook open on the desk. My face reddened. “I’ve been looking at your writing. It’s very interesting.” Out of my expectation, he broke into a wide smile, and his eyes welled up with tears. Then he began to tell me the family story, explaining the parts I didn’t understand.
As both a grandson and a journalist, I asked questions that brought color to these histories. Why did my great-grandfather leave Iraq in such a hurry in the early 1900s? Why did he work as a traveling salesman in the remote Andes Mountains? Answers to these questions brought me a sense of excitement, sort of like unlocking a new world.
Recently, I was traveling the country to discuss a book I wrote about my search across Argentina for traces of my great-grandfather. What I’ve realized by talking with others is that time and energy remain our biggest barriers to hearing our families’ stories. For thousands of years, people have changed food to please their sense of taste. More than 3, 000years ago Mesoamericans, living in what is Mexico and Central America today, cooked com kernels (玉米粒) in a solution of wood ash or limestone. The process unlocked nutrients and softened the tough outer shells of the corn, making it easier to chew.
With the invention of canned goods in the 19th century, the industrial-scale transformation of food became possible. According to the UN, the average daily food supply available for a person in the rich world increased by over 20% between 1961 and 2021, to 3, 500 kilocalories. In that time, obesity rates have more than tripled; today, nearly one in three people globally is obese or overweight.
Now worries are mounting that the heavy processing used to cook up cheap, tasty snacks may itself be harmful. A parțicular target is “ultra-processed foods” (UPFs), heavily processed foods like ice-cream or instant noodles. At the heart of the debate is a question: are UPFs unhealthy because their nutritional content is poor, or does the processing somehow pose risks in itself? At the turn of the 21st century some scientists noticed that people in Brazil were buying less sugar and oil than in the past. Yet rates of obesity were still rising. This unintentionally occurred with the growing popularity of packaged desserts and ready-made meals.
By now numerous studies have shown that people who consume diets high in UPFs tend to have more health problems. But a recent analysis by Samuel Dicken and Rachel Batterham at University College London reviewed 37 studies and found that even after adjusting for fat, sugar and salt UPFs were still strongly linked to poor health. That suggests there is more to their harm than just a poor nutrient profile.
Where those harms come from is still unclear, however. With so many influential causes that could also explain poor health — such as income and education — observational studies alone cannot offer conclusive answers. Arne Astrup, a Danish researcher, argues that evidently most of the studies that make statistical adjustments to try to isolate (分离) the effects of processing are “not good enough”.

A technology with roots going back to the Bronze Age may offer a fast and inexpensive approach to helping achieve the United Nations climate goal of net zero emissions by 2050, according to recent Stanford-led research.
The technology involves fitting heat-absorbing bricks in an insulated (隔热的) container, where they can store heat generated by solar or wind power for later use in industrial processes. The heat can then be released when needed by passing air through channels in the piles of “firebricks”, thus allowing cement, steel, glass, and paper factories to run on renewable energy even when wind and sunshine are unavailable. These systems are a form of thermal energy (热能) storage. The bricks are made from the same materials as the bricks that lined primitive kilns (窑) thousands of years ago.
Batteries can store electricity and provide it to generate heat on demand. “The differences between firebrick storage and battery storage are that the firebricks store heat rather than electricity and that their cost is one-tenth the cost of batteries,” said lead study author Mark Z. Jacobson, a professor at Stanford University. “The materials are basically just the components of dirt. ”
The researchers adopted computer models to compare costs, land needs, health impacts, and emissions involved in two scenarios for an imagined future where 149 countries in 2050 are using renewable sources for all energy purposes. In one scenario, firebricks provide 90% of industrial process heat. In the other, there’s zero adoption of firebricks or other forms of thermal energy storage. The researchers found the scenario with firebricks could cut costs by $1.27 trillion across the 149 countries, while reducing the demand for electrical energy and energy storage capacity from batteries.
Jacobson’s focus on firebricks is relatively new, inspired by a desire to identify effective solutions that could be adopted quickly. “Here I can see a substantial benefits at low cost from multiple angles, from helping reduce air pollution deaths to making it easier to turn the world to clean energy,” he said.
