Scottish researchers hope for something else. One of their papers, which deals with whisky tasting using an artificial tongue, explains that “artificial tongues/ noses work by combining the responses of multiple cross-reactive sensors, allowing them to identify chemical mixtures through trained pattern recognition”. A team of researchers from the University of Massachusetts Amherst investigated how cells stand up to stress in a recent study that was published in the journal Cell Reports. They found that a damage-repairing enzyme (酶) known as ClpX may not only mutate (变异) to fix multiple cellular issues but can also react to shifting levels of cellular energy to maintain cell health.
“We study a class of enzymes, called proteases (蛋白酶), which target and destroy harmful proteins within a cell. These proteases can selectively recognize specific proteins,” says Peter Chien, the paper's senior author. “But how do they do this?”
To answer this question, Chien and his co-authors focused on two specific proteases, Lon and ClpX, each of which is able to recognize a different harmful protein. It had long been believed that Lon and ClpX functioned similarly to keys: each could open only a specific lock and no other, and if a cell lacked either, then serious side effects would occur. But following a series of experiments that involved deleting Lon from groups of bacterial cells, Chien's team saw something odd: some groups of cells were surviving.
This observation led to their first discovery: ClpX can mutate to perform a Lon-like function, though it loses some of its ClpX abilities. In tracking exactly how the ClpX mutation allowed the protease to expand its function, the team made its second discovery: wild, non-mutant ClpX can also perform some of Lon's duties, under the right conditions.
It turns out that ClpX is highly sensitive to ATP, an organic substance that is the energy source for all living cells. At normal levels of ATP, ClpX focuses on its own duties, but at a specific, lower point it suddenly starts cleaning up after Lon.
“This is a real breakthrough in the basic understanding of how cells work,” says Chien. “It changes the rules: not only does cellular energy control how fast a cell works, but how it works, as well."

Picture the scene: You’re in a not-particularly-fancy Italian restaurant and the people next to you get up from their table and walk out, leaving behind a few perfectly good slices of pizza. Obviously, it’s unusual to grab a slice. But should it be?
Responses to the question vary. Most people consider it socially inappropriate, believing that it has severe negative consequences for one’s social reputation. Some even strongly suggest abandoning the idea immediately. I don’t find it unpleasant but it’s a pretty unusual thing to do. However, social convention must adapt to the times, so I think it’ s time to turn this outdated rule on its hungry head.
Firstly, and most obviously: waste. Food waste is a huge problem in the UK, with almost ten million tonnes of food wasted from UK households, restaurants and food factories in 2018, according to research by food waste charity WRAP.
Why not help out in the seemingly smallest of ways? Or at least don’t criticize those who are making efforts to address the problem. Apps like Too Good To Go are great for redistributing surplus (过剩的) food, but every little bit helps, as someone once said. We’re now in a cost of living crisis.
There may be concern for the safety of leftovers due to germs. Actually, there is no need to. Do you think chefs wash their hands after any contact with their face or nose? And they’re breathing over your food the whole time. Anyway, germs are good for your immune system.
Often, people tend to take their own leftovers home from a restaurant, and now look how far we’ve come. Taking other people’s leftovers is the next trend. No matter whose, let’s make taking leftovers as common as possible. Let’s just full-steam ahead till to take or not to take is never in question. We live in a world where it’s impressive for people to say they only buy secondhand for eco reasons. Why can’t we also live in one where taking leftovers, particularly those that belong to others, no longer draws any surprise?

While human touch has been improved with prosthetic limbs, and hearing with microphones, taste and smell have proved trickier to upgrade. But not impossible. News that an artificial tongue developed at the University of Glasgow could be used to detect poisons or fake alcoholic drinks shows how much work is being done to develop artificial intelligence that would taste and smell more accurately than mere humans.
A New Zealand wine dealer has partnered with the AI company Spacetime to create an AI wine waiter to assist customers in matching wines to their likes and their food. The startup Cyrano Sciences is commercialising an electronic nose invented at the California Institute of Technology to not just improve human smell, but also possibly replace police dogs in the detection of drugs and bombs. The US food business McCormick & Company and IBM are trying to develop an AI application that uses data to learn about users’ taste preferences and produce new, appealing flavor combinations for them. A similar app is being developed at the Massachusetts Institute of Technology to digitize flavors and data in order to match dishes to individual tastes.
Scottish researchers hope for something else. One of their papers, which deals with whisky tasting using an artificial tongue, explains that “artificial tongues/ noses work by combining the responses of multiple cross-reactive sensors, allowing them to identify chemical mixtures through trained pattern recognition”. They suggest that their reusable artificial tongue can be used to detect fake whiskies. That would be a boon when the high-end whisky market is flooded with fakes.
However, there are philosophical problems about AI doing our tasting and shaping our tastes. Napoleon once said that life never appeared so rosy as when viewed through a glass of Chambertin. What machine could feel such pleasure? More urgent is the worry that the culture of customized shopping — “You liked that? A team of researchers from the University of Massachusetts Amherst investigated how cells stand up to stress in a recent study that was published in the journal Cell Reports. They found that a damage-repairing enzyme (酶) known as ClpX may not only mutate (变异) to fix multiple cellular issues but can also react to shifting levels of cellular energy to maintain cell health.
“We study a class of enzymes, called proteases (蛋白酶), which target and destroy harmful proteins within a cell. These proteases can selectively recognize specific proteins,” says Peter Chien, the paper's senior author. “But how do they do this?”
To answer this question, Chien and his co-authors focused on two specific proteases, Lon and ClpX, each of which is able to recognize a different harmful protein. It had long been believed that Lon and ClpX functioned similarly to keys: each could open only a specific lock and no other, and if a cell lacked either, then serious side effects would occur. But following a series of experiments that involved deleting Lon from groups of bacterial cells, Chien's team saw something odd: some groups of cells were surviving.
This observation led to their first discovery: ClpX can mutate to perform a Lon-like function, though it loses some of its ClpX abilities. In tracking exactly how the ClpX mutation allowed the protease to expand its function, the team made its second discovery: wild, non-mutant ClpX can also perform some of Lon's duties, under the right conditions.
It turns out that ClpX is highly sensitive to ATP, an organic substance that is the energy source for all living cells. At normal levels of ATP, ClpX focuses on its own duties, but at a specific, lower point it suddenly starts cleaning up after Lon.
“This is a real breakthrough in the basic understanding of how cells work,” says Chien. “It changes the rules: not only does cellular energy control how fast a cell works, but how it works, as well."

Picture the scene: You’re in a not-particularly-fancy Italian restaurant and the people next to you get up from their table and walk out, leaving behind a few perfectly good slices of pizza. Obviously, it’s unusual to grab a slice. But should it be?
Responses to the question vary. Most people consider it socially inappropriate, believing that it has severe negative consequences for one’s social reputation.
