Do you like eating chocolate? Chocolate helps us a lot and is good for our health. When we feel tired, it gives us energy. Companies spend millions of dollars on tools and machines to make chocolate.
With a few materials, however, you can turn your kitchen into a chocolate factory. Today we will teach the Cocoa Powder Method, and it is easy for beginners. Try it and make your own home-made chocolate.
Here are the materials you need: cocoa powder-2 cups (220 g); butter-3/4 cup (170 g); sugar-3/4 cup (100 g); milk-2/3 cup (150 ml); salt-a little; water-1 cup (225 ml).
Now, please follow these steps. First, mix the cocoa powder and butter in a bowl until you have a smooth paste (酱). Then, add the cocoa powder mixture (混合物) to the hot water and stir (搅拌) it. Allow the temperature to rise back up. Put the hot mixture into a bowl. Add sugar and salt, and then stir it. Add milk, and stir it until it is smooth. I took up baking (烘焙) when I was twelve. At that time I was working on my school bakery project with my classmates. I tried a few times, but I wasn't very successful. My parents advised I learn from my grandmother, who later gave me her recipe (食谱) and instruction as well. After two years’ practice, I was able to make delicious bread. I have come to realize making bread means a lot to me although it takes a long time.
To make bread, others usually use quick-rise yeast (酵母), but I don't. Every Saturday morning, after mixing proper amount of water with flour, sugar etc, I take time to wait for the dough to rise. This is my way to slow down and smell the roses.
Baking does require great patience. In my hands, the dough is slowly growing. It’s becoming softer. I can feel the change, which connects me to something quite different from the modern way of living. To me, making bread is a push against our culture of convenience. It certainly takes more time than buying bread from a store, but I enjoy it.
I've stuck with my grandmother’s recipe without making any change. Now this tradition has continued for years. Sometimes, in order to fit it in, I have to change my schedule. But I have never considered giving it up.
By the time my children get home from school, the bread has been baked and cooled. They step into the house and the first thing they do is to take a deep breath of the warm, honeyed air. My bread-baking has also helped them to slow down and understand the value of taking their time and leading an unhurried life.

As the powerful singing voice of 72-year-old Liu Aibang echoes (回荡) across the classroom, some students control shadow puppets (皮影木偶) with rods (棍), making shadow puppets step onto the “stage”--a cloth screen. Those sitting in front of the stage play music on drums, Suona horns and other instruments. This is a Daoqing shadow puppetry class at Longdong University. Except Liu, the other performers (表演者) are all college students around the age of 20.
Starting in the Han Dynasty, Daoqing shadow puppetry has been included in the national intangible cultural heritage list (国家非物质文化遗产名录) since 2006. For years, shadow plays were welcomed by people of all ages, and were often performed during the festivals. However, with films and TV series becoming popular in the late 1980s, many performers moved on to other jobs. Faced with the choice between protecting this art and making a good living, Liu chose to stay on.
One day in 2020, Liu received a phone call from Zhao Zhixue, head of the music school at Longdong University. Zhao told him that the school planned to introduce Daoqing shadow puppetry into college classrooms and develop young students’ long-term interest in intangible cultural heritage. Excited by the news, Liu dropped his farm work and became a part-time teacher at the college.
Liu hopes to train more young people in the field. “Just as true love is not a one-man show, the learning and keeping of cultural heritage needs efforts (努力) from both the old and the young,” Liu said.
