1 Recently I took a class on how to make one of China’s most famous and traditional foods: dim sum. I thought making dim sum was simple. It was just a tasty little dumpling. My teacher, Chef Wang, quickly showed me I was very wrong!
2 The first recipe I learned was for xia jiao, shrimp dim sum. When I asked Chef Wang how long it takes, he said, “Preparing xia jiao takes one hour. We must go through many steps. First, we make the filling and the dough. Next we fold the filling inside the dough. Then it’s time to put our dumplings in the steamer.”
