Read the following text entitled “America's Most Popular Steaks at a Glance” and sight interpret one type of steak of your interest into Chinese. Interpreting Practice America's Most Popular Steaks at a Glance America's Steak (常用配汁有:黑胡椒汁,红酒汁,黄油白酒汁,蘑菇汁等) 牛排一般搭配红酒一起享用(红酒配红肉,白酒配白肉,香槟庆祝用) Rib Eye takes the number one spot since most steak aficionados(fans) consider this the best all-around cut. The rib eye has the most fat compared to the other cuts, which is why it's such a tender, juicy, and flavorful piece of beef. It can be grilled, broiled, or pan-fried with equally delicious results. Rib Eye Steak This steakhouse classic is perfect for the grill but also does well pan-fried. It is very well marbled, tender, and full flavored, and it's a great steak for all occasions. New York Strip Steak It is lightly marbled with fat and has the mildest flavor of all these cuts. This area of the animal doesn’t do much work, so the meat is extremely tender - in fact, it's the tenderest cut available. The buttery texture is what makes this cut so desirable. This is considered a special occasion steak and is the most expensive cut listed here. Beef Tenderloin (Filet) This steak is the most affordable cut on the list. While very flavorful, it is a bit less tender than all the other cuts. It's a relatively lean cut, without a lot of marbling. Like the rib eye steak, it can be cooked in any manner. It's also a good choice for cutting in cubes and skewering with vegetables for grilling. Sirloin Steak The T-bone steak is really two steaks in one. The T-shaped bone divides a New York strip steak and a tenderloin filet. When choosing this cut, keep in mind that meat next to the bone will be rarer than the rest of the steak. This steak is not a good choice if you like your meat well done since by the time the meat is cooked near the bone, the other parts will be dry. T-bone Steak Tips for E-C interpreting Tips for E-C interpreting 3. How much do you know about Chinese food and ways of cooking? Can you introduce or interpret typical Chinese food to foreigners? Watch a video clip from a Chinese soap opera “Ode to Joy”. How do you think of the interpretations of Shanghai dishes? Interpreting Practice 三黄鸡:___________ 醉虾:______________ 红烧肉:_____________ Soy Sauce Chicken Drunken Shrimp Braised Pork Tips for interpreting Chinese dishes into English 煮 炒 煎 爆炒 炸 烧 /焖 /烩 熏 烤 烧烤 蒸 煨 煸 白灼 炖,煲 烘 boiled stir-fried fried quick fried deep fried braised smoked roasted barbecued steamed simmered saute scalded stewed baked boiled stir-fried fried quick fried deep fried braised smoked roasted barbecued steamed simmered saute scalded stewed boiled stir-fried fried quick fried deep fried braised smoked roasted barbecued steamed simmered Ways to translate Chinese dishes Describe exactly the elements/ingredients in the dish 写实型译法 舍去中餐菜单中的“行话隐语”,真实地描述菜肴的原料、制作方法及特点,在翻译时,直接译出该菜肴的原料、烹调方法及菜肴的形意。 如: 梅干菜扣肉(Steamed Pork with Dried Mustard Cabbage) 虾仁海参(Stewed Sea Cucumbers with Shrimps) (4) V-ed (烹饪方法)+V-ed (菜料形状)+ N(主料)+with+ N(辅料), *** Style 中国菜系丰富多样,不同地域会有不同的特色菜。 4. Besides, make sure that the spout of teapot is not facing anyone. The spout should always be directed to where nobody is sitting, usually outward from the table. Visitor: Sounds complicated. It could be really embarrassing if I don't pay attention. Interpreter: Yes, your Chinese host will not expect you to know everything about banquet etiquette. But he will greatly appreciate it when you’re displaying some knowledge of it. Homework: Listen to an English and a Chinese audio. Take notes and interpret them consecutively from English to Chinese or Chinese to English. 71 THANK YOU FOR YOUR ATTENTION! $$
