Sobrino de Botín remains in its original building with the same interior from the 18th century. The restaurant, which was originally named Casa Botin, was opened by a French cook named Jean Botin and his wife. The Botins never had children and passed the restaurant on to Mrs. Botin’s nephew and was renamed Sobrino de Botín as “sobrino” means “nephew” in Spanish. Sobrino de Botín has attracted many writers and has been mentioned in novels by Ernest Hemingway.

We’ve all heard the predictions — flooding all over the shop; homes lost to storms; entire cities under water... And the climate emergency is only getting worse, which means the coming decades will likely see architects (建筑师) and town planners having to rethink entirely the way they design cities.
Some think we may even need brand-new cities, and many are looking to the sea for inspiration. Enter Danish star architect Bjarke Ingels and his uncommon Oceanix City project. This huge, six-sided, tsunami-resistant city would be fixed to the sea floor and be able to produce its own heat, power and water. Because it floats, it would move as the environment around it changes. As well as the hypothetical (假设的) Oceanix City, the architect has more clear plans. Biodiver City — yes, that’s its real name — would include three islands providing homes for up to 18, 000 people. Driving cars would not be allowed here. Boats would be people’s main means of transportation.
One clear disadvantage of these cities? They could only house a minority of the people who live in big cities. But experts think floating cities may be a way to relieve the climate crisis (危机). Architect Kunlé Adeyemi, who runs Amsterdam-based firm NLE, has already created several floating buildings, from schools to concert halls, which move with rising water levels. “Controlling water is going to be a major challenge for future cities,” he says, adding that “the issue of water resource is already shaping architecture practice, especially in Africa.”
But for Adeyemi, it’s not all darkness. He sees this as an opportunity to strengthen the “relationship between water, land and humans”. So perhaps floating cities aren’t just a weak and belated reaction to climate change. They could bring us closer to our planet, too.

In an effort to help eco-conscious consumers, a nonprofit group Free-Go in Geneva. Switzerland is making public fridges available, so restaurant owners, at-home cooks and others can use them to give away food before it goes bad. It’s part of a bigger effort by communities in Switzerland to do their part for the environment while helping to cut down on food waste.
The program costs about 840,000 to run each year and enjoys the support from both charity groups and the city government. It launched a year ago with a single fridge outside a community center in western Geneva and it now has four fridges, placed around town. A fifth one is planned before year’s end. Passers-by can grab fruit, vegetables, bread and other food from the fridges to take home for free.
Marine Delevaux is the project’s director. She said the food left in its fridges is generally snapped up within an hour after delivery. For health and legal reasons, no frozen foods, open food containers, prepared meals, or alcohol are permitted in the fridges. Contributors of food from the private sector—like restaurants—must promise to ensure the donated food is safe to eat.
Free-Go is also experimenting with scheduled pickups at apartment buildings to make it easier for residents to participate in the program. It has also set up a “hotline” that restauranteurs can use to call for getting back unused food. “Generally, when the food collected from shops and restaurants arrives in the morning, people are already waiting to help themselves,” Delevaux said, adding that the first Geneva fridge helped save some 3.2 tons of food from going to waste last year.
Because the food is free, and the donations can change, it’s uncertain what will turn up in the fridges. Some people receiving food might end up being disappointed.
Cuendet is a 54-year-old teacher. Just after leaving some vegetables that she grew, she said, “We have too much” and praised the program “because this neighborhood has a lot of need.”
