Eating in Japan needs the knowledge of several customs. People should say grace(祷告)before beginning a meal in western countries. This includes thanking the person who prepared the meal. However, something is different in Japan.
In Japanese restaurants, a rolled hand towel is given to the customers to wipe(擦)hands. Wiping the face or neck with the same towel is thought to be impolite. Picking food from the plate while leaving out certain food is rude, too. Passing food from one pair of chopsticks to another is also a taboo. Any food to be passed should be placed on the plate of the person taking it.
It is necessary that you clear your plate completely while eating. Making a noise while eating is not thought to be impolite, and is in fact a sign that shows you are enjoying the soup or noodles. Additional ingredients such as soy sauce(酱油)are poured into a different small bowl, and pouring too much soy sauce in the bowl means greed(贪婪)and wastefulness. Japanese food, including sushi, is eaten with soy sauce. After the meal, a polite "thank you" is heard in the Japanese language.
Learning how to use chopsticks before leaving for Japan is a wise thing to do, and will be welcome among the Japanese people. While paying money, placing money in the hands is avoided, and money is placed on a tray(托盘)that is placed near the cashier. If money is to be placed directly in the hands, it should be given and received with both hands as a form of politeness.
